When this wife's life becomes a little crazy

"Honey, every weekend in May is booked already."

"What on earth do we have?"

"I have no idea how it happens, I don't know. Check my day planner."

"Yup, you're right. Four things this weekend. Including the pug party."

"I don't think I'm going to be able to retake the GMAT course. I don't know how I'll learn Algebra. And -- I signed up for a recipe challenge. Help me think of a recipe."

"Honey. Seriously. You ever think about just laying off and not doing so many things at once?"

"Well I think about it. But it never seems to happen. I just love doing...everything."

So what's a girl who loves everything, but doesn't have everything to give her husband as dinner? A meaty dish that is easy to whip up and makes plenty of leftovers. It honestly is a go to fave at our house. 


Turkey Burgers   Print this recipe
From Amanda and Good Things Catered (darling, you have no idea how often we make these)
Hubs says I can cook with ground turkey as long as its flavorful enough to not taste like it, and I continue because I don't want him to die early of heart disease. These spicy burgers pass the test, as long as I follow the recipe.

Ingredients:
2 lbs lean ground turkey
2 tsp Worchestershire sauce (I used extra)
1 tsp dijon mustard
1 large pinch of salt
ground black pepper to taste
onion powder/garlic 

Directions:
-In large bowl, add all ingredients and work lightly with hands until well blended.
-Heat grill or grill pan on medium-low heat
-Divide meat into four portions and lightly flatten into nice, thick 1.5-inch patties 
-Cook over medium-low heat *without moving* burger until bottom side is browned and cooked through, about 8 minutes.
-Turn burgers over and continue to cook until bottom side is browned and the burger is cooked through but not dried out about 8-10 more minutes.
-Remove from heat and serve immediately.

I have a feeling everyone is going to be making meals that are ever so much more gourmet. But ah, there will be time for that. When finals and this test is over. I promise husband, I will be a wife again. So basically, I'm stoked to read all the other submissions.

Those burgers look super yummy, I will have to try those out!
My husband is the cook at my house, but something we make together is pizza, which might work for you because it does not take too much time.
We buy a store-bought whole wheat pizza crust, and top it with spinach (you can use fresh or frozen), feta cheese, roma tomatoes, artichokes, and ham (I think prosciutto would be good, too). It only takes about 15 to 20 minutes, so it is easy and yummy :)

Adam doesn't like the taste of ground turkey?? It's a new favorite in our house! We've sworn off ground beef in favor of ground turkey breast and use it in everything! My personal favorite is meatballs and spaghetti, which is odd since I hate meatballs normally. Hmmm... anyways, I'll have to try this recipe next time we make burgers!

I love turkey anything. These sound good to me :) I am also loving Sarah's recipe for pizza.
